WW: TEXAS MEAT LOAF

1 lb lean ground beef
1 1/4 cup salsa
3/4 cup quick oatmeal
1 each carrot, shreaded
2 each plum tomatoes, diced
1/2 cup mushrooms, chopped

Preheat oven to 350 degrees. Spray a loaf pan with pam. In a large bowl, combine ground beef, salsa, oatmeal, carrot, tomatoes, and mushrooms. Shape the mixture into a loaf. Place the loaf in the pan and bake until browned, and a knife inserted in the center comes out clean and hot, about 1 hour and 5 minutes. Let stand about 10 minutes before slicing. Per serving: calories 183, total fat 8 G, saturated fat 3 G, cholesterol 44 MG, sodium 61 MG, carbohydrate 12 G, fiber 2 G, protein 16 G, calcium 11 MG, points 4.
