WW: TOURKEY TORTILLA CASSEROLE

2 teaspoon olive oil
1 each green bell pepper, chopped
1 each onion, chopped
1/2 lb ground turkey breast
14 1/2 oz cajun stewed tomatoes 1 can
1 cup nonfat refried beans
1 can chopped green chilis
6 each corn tortillas, 6 inch
1/3 cup low fat jack cheese

Preheat oven to 350 degrees. Heat oil in a large nonstick skillet. Add green pepper and onion, and cook until vegetables are tender, about 5 minutes. Add turkey and cook, stirring as needed, until browned, about 5 minutes. Stir in tomatoes, beans, and drained chilis. Bring to a boil. Reduce heat and simmer uncovered, stirring frequently, until slightly thickened, about 5 minutes. Spoon 1/3 of the turkey mixture into the bottom of a sprayed 10-6 inch baking pan. Cut tortillas into quarters. Arrange half of the tortillas evenly over the top of turkey mixture in bottom of pan. Repeat the layering once more, ending with the turkey mixture. Sprinkle evenly with the cheese. Bake covered, 20 minutes. Uncover and bake until heated through and golden, about 10 minutes longer.
