1 tablespoon flour
1/4 teaspoon black pepper
1/4 teaspoon poultry seasoning
4 each turkey cutlets, 3oz
1 tablespoon olive oil
1 cup sliced mushrooms
1 each onion, chopped
1/4 cup lean ham, chopped
2 each low fat motzarella cheeses
1/3 cup pimentos, chopped

Preheat oven to 350 degrees. Spray an 8 inch baking pan. In a gallon sized zip lock bag combine flour, pepper, and poultry seasoning. Add turkey, and shake to coat. Heat oil in a large nonstick skillet. Add turkey and cook until lightly browned, about 2 minutes on each side. Transfer browned turkey to the prepared baking pan. In the same skillet combine, mushrooms, onion, peminto, and ham. Cook, stirring constantly until vegetables are tender, about 5 minutes. Spoon vegetables evenly over turkey in pan. Cut two, 3/4oz, part skim motzarella cheese slices in half, and top each cutlet with one of the 4 cheese slice halves. Bake until the turkey is cooked through, about 15 minutes.
