WW: TURKEY PIE

6 each sheets filo dough, 4oz
1 teaspoon margarine
1 each onion, chopped
3 tablespoon flour
2 cup skim milk
1 lb mixed vegetables
2 cup cooked turkey breast, diced
1 cup sliced mushrooms
1 pkg chicken broth mix
1/3 cup nonfat cheddar cheese

Preheat oven to 375 degrees. Cover the filo dough with a damp towel and plastic wrap, to prevent drying. Melt margarine in a large nonstick sauce pan. Add onion and cook, stirring as needed until tender, about 5 minutes. Add flour and cook, stirring constantly, until onion is coated with flour, about 1 minute. Gradually stir in milk. Cook, stirring constantly, until mixture boils and thickens, 4-5 minutes. Add mixed vegetables, turkey, mushrooms, and broth mix. Return mixture to a boil, stirring as needed. Remove from heat and stir in cheese. Pour mixture into a 9 inch deep dish pie plate that has been sprayed with nonstick cooking spray. Fold each filo sheet in half and place, 1 at a time, on top of turkey mixture, spraying each sheet lightly with the cooking spray. Tuck under any overlapping edges. Bake until golden, about 30 minutes. Let stand 10 minutes before serving.
