ZUCCHINI CASSEROLE: (Herb Stuffing Mix)

4 each zucchini
1/2 each onion, chopped
1 each carrot, chopped
1/2 each stick, butter
2 1/2 cup herb stuffing mix
1 1/2 cup cooked chicken
1 can cream of chicken soup
1/2 cup sour cream
2 tablespoon butter

Cut zucchini in half lengthwise, and slice into 1/2 inch slices. Cook zucchini till tender, and drain. In saucepan, cook onion and carrot in 1/2 stick butter till tender, but not brown. Remove from heat. Stir in 1 1/2 cups herb stuffing mix, cooked chicken, cream of chicken soup, and sour cream. Gently stir in zucchini. Turn into a 2 quart casserole. Melt remaining 2 tablespoons butter, and add remaining herb stuffing cubes, then toss gently. Sprinkle over top of casserole. Bake uncovered, at 350 degrees, 30-40 minutes.
