Breakfast Burritos

 

4 sausage patties cooked and chopped

2 Tbls. chopped onion and red pepper

1 Cup hash browns (fresh, frozen, or left over potatoes)

4 eggs

shredded cheddar cheese

sour cream

8 flour tortillas

 

Lightly oil a skillet and cook hash browns, chopped red pepper and chopped onion until done.  Add cooked, chopped sausage.  Divide potato and sausage mixture over the 8 tortillas.  Scramble eggs and cook until done.  Divide eggs over the 8 tortillas.  Top each burrito with shredded cheddar cheese and sour cream.  Roll tortillas and serve.  Makes 8 breakfast burritos.
