Shrimp Stir-Fry

1 cup uncooked shrimp

1 tsp peanut oil

2 cups Chinese mixed vegetables

2 Tbsp teriyaki sauce

1 Tbsp pineapple juice

 

In nonstick skillet or wok heat oil. Add shelled and deveined shrimp; cook over medium-high heat, stirring, 2 minutes.   Add Chinese vegetables; cook, stirring, 2 minutes.  Add teriyaki sauce and pineapple juice; cook, stirring, until shrimp and vegetables are cooked, 1-2 minutes.

 

Per serving:  265 calories; 6.5 grams fat; 5 grams fiber.  5 points.
