Baked Apple

1 medium apple

2 Tbsp golden raisins

1 Tbsp orange juice concentrate, thawed

1 dash cinnamon

 

Core and partially pare apple.  Stuff core cavity with raisins; drizzle apple and raisins with orange juice concentrate and sprinkle with cinnamon.  Cover loosely; microwave on HIGH 2 1/2-3 minutes, until apple is soft. 

 

Per serving:  143 calories; 0.6 grams fat; 4.5 grams fiber.  2 points.
