1 tomato

1/4 small onion

2-3 fresh cilantro leaves

1 tsp lime juice

1/2 tsp finely chopped jalapeno pepper

1 dash salt

 

Chop tomato, onion, and cilantro and place in glass or ceramic bowl.  Add lime juice, jalapeno pepper, and salt and stir to combine.  Serve immediately or refrigerator, covered, until chilled.

 

Per serving:  51 calories; 0.5 grams fat; 2.4 grams fiber. 1 point.

 

Serving suggestion:  Serve with 12 reduced-fat tortilla chips.  Additional points value:  2.
