Bean and Chicken Soup

1 skinless, boneless, cooked chicken breast, chopped

2 Tbsp onion, finely chopped

1/2 cup peas and carrots

1 cup chicken broth

1/2 cup drained white kidney beans

 

Roughly chop chicken breast. In medium saucepan sprayed with nonstick spray, cook chopped onion with peas and carrots, stirring constantly, until softened.  Add chicken, broth, and beans; cook until heated, 2-3 minutes.

 

Per serving:  300 calories; 5 grams fat; 7 grams fiber.  6 points.
