Spinach Salad

1 small red potato

1 slice cooked bacon

4 cups baby spinach leaves

1 hard-cooked egg, sliced

2 Tbsp prepared fat free vinaigrette

 

Pierce potato several times with fork; microwave on HIGH 3-3 1/2 minutes, until fork-tender.  Slice thinly.  Crumble bacon.  In large salad bowl combine baby spinach leaves, sliced hard-cooked egg, potato, and bacon.  Add dressing; toss.

 

Per serving:  315 calories; 9 grams fat; 4 grams fiber.  4 points.
