Spinach Fruit Nut Salad

2 cups baby spinach leaves

3 pecan halves, chopped

1/2 cup drained mandarin orange slices

1/4 cup cucumber, sliced

2 Tbsp prepared fat free vinaigrette

 

Chop pecans.  In bowl combine baby spinach leaves, orange sections, cucumber, and pecans.  Add dressing; toss.

 

Per serving:  129 calories; 2 grams fat; 3 grams fiber.  2 points.
