BB: FAVORITE BROCCOLI CHEESE RICE CASSEROLE

cheese/eggs, vegetables

2 pkg uncle ben's wild rice
2 each heads broccoli
1 can chicken broth, 14oz
2 can chopped mushrooms, 8oz each
2 can whole water chestnuts, 8oz
2 cup nonfat cheddar cheese
1 cup crushed stuffing cubes
1 1/2 teaspoon mrs. dash spicy seasoning

Prepare the rice as directed, substituting butter buds for margarine. While rice is cooking steam fresh broccoli. In a large bowl combine cooked rice, steamed broccoli, rinsed and drained mushrooms, water chestnuts, and chicken broth. Add seasoning and cheddar cheese. Spoon into a large casserole dish that has been pammed. Top with crushed Pepperage Farm, or home made low fat croutons. Bake covered, at 350 degrees, 20 minutes. Remove cover and continue baking 10 minutes longer. Per serving: fat 0.9 G, cholesterol 0 MG, fiber 2 G, calorries 172, 5 percent calorries from fat, protein 8 G, carbohydrate 33 G, sodium 305 MG.
