Banana Bread
(Geoffrey's low sugar, whole wheat changes in parenthesis)

2 each sticks butter (margarine)
3 cup sugar (1 cup sugar, 2 cups Splenda)
4 each eggs
4 each bananas, mashed
1 cup milk
3 1/2 cup flour (1 1/2 cup unbleached bread flour, 2 cups whole wheat flour)
2 teaspoon baking powder
2 teaspoon baking soda
1 teaspoon salt
1 cup nuts, chopped

In large bowl, mix butter, sugar, eggs, bananas and milk. Add dry ingredients and mix well. Pour batter in tube pan or 2 loaf pans. Bake at 325 degrees, 70 minutes.

Yield: 24 servings
