BB: FAVORITE PAM'S SPECIAL HAWAIAN CHICKEN

1 can pineapple rings, 16oz
8 each chicken breasts
1/2 cup soy sauce
1/2 cup sherry
2 1/2 cup pineapple juice
1/4 cup wine vinegar
1/3 cup sugar, or:
1/4 cup sugar plus:
2 pkg sweet and low
1 teaspoon garlic powder
1 pkg uncle ben's wild rice
1 can mushrooms, 8oz, drained

To make marinade, combine all ingredients accept rice, mushrooms, and chicken, in a large bowl. (Drain pineapple rings). Place chicken breasts in bowl and marinate for 24 hours. Broil chicken breasts on outside grill, or in oven broiler. During the last 2 minutes, broil pineapple rings to place on top of chicken breasts. Serve over wild rice and mushrooms, with pineapple rings on top. To make ahead to serve later, this dish can be stored in refrigerator for up to 2 days before using. Heat chicken dish in oven or microwave before serving.
