BB: FAVORITE TURKEY LASAGNA

1/4 cup nonfat chicken broth
1 cup chopped onion
2 teaspoon minced garlic, in a jar
1 lb ground white turkey
1 can italian tomatoes, 16oz
1 can tomato paste, 12oz or
1 can tomato sauce, 15oz
1 1/2 teaspoon light salt
2 teaspoon dried basil
1 teaspoon dried oregano
1/2 teaspoon pepper
1 each bay leaf
1/2 teaspoon red pepper flakes
1 tablespoon sugar, or:
1 1/2 pkg sweet and low
1/2 cup red wine
2 cup sliced mushrooms
1 pkg lasagna noodles, 16oz
1/2 cup nonfat parmisan cheese
1 pkg nonfat ricotta cheese
1 lb nonfat motzarella cheese
3 each egg beaters, beaten

Cook lasagna noodles, and set aside. Saute onion, fresh mushrooms, and garlic in chicken broth. If using canned mushrooms, add them later. After onion is cooked add tomatoes, tomato paste, salt, pepper, and other seasonings. Meanwhile, in microwave, cook turkey in a covered bowl, about 5 minutes. Drain turkey, and add to sauce mixture. Stir in sugar, canned mushrooms if using, and wine. Cook about 30-45 minutes on low, stirring occasionally. Remove bay leaf before you put the casserole together. In a small bowl combine egg beaters, parmisan cheese, and ricotta cheese. Spray a 10-15 inch casserole dish with pam. Spoon a small amount of sauce in bottom of dish. Next, layer noodles and grated motzarella cheese. Cover with sauce. Repeat layers ending with grated motzarella cheese on top. Bake at 350 degrees, uncovered, about 45 minutes. Let stand about 10-15 minutes before cutting. This recipe can also be made in 2 9 inch casserole dishes. To save time, instead of home made sauce you can use 2 26 3/4oz cans of Hunts light fat free spaghetti sauce. Simply add ground turkey and mushrooms to the canned sauce, and prepare the rest of the recipe as directed. Per serving, all sugar: fat 0.8 G, cholesterol 15 MG, fiber 2 G, calorries 167, 5 percent from fat, protein 18 G, carbohydrate 21 G, sodium 350 MG. Per serving one half sweet and low: calorries 165, carbohydrate 20 G.
