Bisquick Cheesy Vegetable Pie

2 1/2 cup mixed vegetables
1 1/2 cup shreaded cheddar cheese
1/3 cup chopped onion
1/2 cup bisquick
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup milk
2 each eggs

Preheat oven to 400 degrees. Grease 9 inch pie plate. Place vegetables, (frozen broccoli, culiflower, and carrots), one half, or 3/4 cup, of cheddar cheese, and onion in pie plate. Place remaining ingredients, except reserved 3/4 cup of cheddar cheese in pie plate. Bake uncovered 35 minutes. Then sprinkle with reserved cheese. Bake 1 or 2 additional minutes.

Yield: 8 servings
