Bisquick, Apple Gingerbread Pan Cakes

1 cup maple syrup
2 tablespoon butter
1 tablespoon grated lemon peel
2 tablespoon lemon juice
2 1/2 cup bisquick
3/4 cup apple butter
1 cup milk
2 tablespoon oil
1/2 teaspoon cinnamon
1/2 teaspoon ginger
1/4 teaspoon nutmeg
2 each eggs

Heat syrup, butter, lemon peel and ginger, over low heat, stirring occationally, until warm and well blended. Heat griddle or skillet over medium high heat, or an electric griddle to 375 degrees. Grease cooking surface lightly. Beat remaining ingredients with wire wisk until well blended. Spoon by slightly less than 1/4 cup ful onto hot griddle. Cook until bubbles break on surface. Turn, continue cooking until brown. Serve hot, with syrup mixture.

Yield: 18 servings
