BLENDER: COLD HAM LUNCH LOAF

1 cup chicken broth
1 each green pepper, quartered
1 each onion, quartered
2 each sweet pickles, sliced
1 tablespoon unflavored gelatin
1/4 cup cold water
2 cup cooked ham, diced
1/2 cup sweet cream
1/2 teaspoon prepared mustard

Place chicken broth, onion, green pepper, and sweet pickles in blender. Blend, 15 seconds. In top of double boiler, sprinkle unflavored gelatin over cold water. Bring water in bottom of double boiler to a boil. Set gelatin in cold water in top of double boiler over boiling water, and stir until gelatin is dissolved. Add gelatin, ham, cream, and mustard, to broth mixture in blender. Blend until smooth, about 30 seconds. Pour ham mixture into loaf pan lined with plastic wrap. Chill before slicing.

Yield: 6 servings
