BLENDER: CORN FRITTERS

1 cup flour
1 teaspoon baking powder
1/2 teaspoon pepper
1/4 teaspoon paprika
2 each eggs, separated
2 cup corn, drained
1/4 cup corn liquid

In small bowl, combine flour, baking powder, salt, and paprika, and set aside. Place egg yolks, 1 cup corn, and 1/4 cup liquid from corn can in blender. Blend 20 seconds, or until blended. Add flour mixture, and blend thoroughly. In medium mixing bowl, beat egg whites until stiff peaks form. Fold corn mixture into beaten egg whites. Drop by teaspoons into hot fat, (365 degrees), and fry until golden brown. Makes 12-18 fritters.

Yield: 12 servings
