BLENDER: CREAM OF CURRIED CHICKEN

3 tablespoon butter
1 each appled, peeled, chopped
2 each ribs celery, chopped
1 each onion, chopped
1 tablespoon flour
2 tablespoon curry
4 cup warm chicken broth
2 cup heavy cream, whipped
2 cup chicken, diced

In medium mixing bowl, whip cream. Set aside for later use. In saucepan, melt butter. Add apple, celery, and onion. Cook about 5 minutes or until tender. Stir in flour and curry. Stir in chicken broth, and cook over low heat, 30 minutes. Place curry mixture in blender. Blend, 45 seconds. Pour into a mixing bowl and cool. Fold in whipped cream. Add diced chicken, and serve.

Yield: 8 servings
