BLENDER: CURRIED CHICKEN

1 cup cooked chicken, diced
1/3 cup toasted almonds
1 each onion, diced
1/2 teaspoon curry
2 tablespoon butter
2 tablespoon flour
1 cup milk
1 cup cooked rice

Place butter and flour in small saucepan. Cook and stir over medium high heat, until butter melts, and forms a thick paste with the flour. Add milk. Cook and stir until mixture boils, and becomes thick and bubbly, forming a medium white sauce. Cook and stir 1 minute longer. Remove pan from heat and set aside. Combine chicken, almonds, onion, curry, and white sauce in blender.Blend to a pulp. Pour chicken mixture into medium saucepan, and heat through. Serve over cooked rice.

Yield: 4 servings
