BLENDER: MINCED CLAM AND CORN CHOWDER

fish, soups, vegetables

1 can minced clams, 7 oz
1 can corn, 12oz
2 cup heavy cream
2 tablespoon butter
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 cup bourbon
1 single croutons

Place undrained clams and corn in blender. Blend 1 minute, or until smooth. Pour corn mixture into double boiler. Add cream, butter, salt, and pepper. Heat to boiling. Add bourbon. Remove from heat. Serve with croutons.

Yield: 6 servings
