BLENDER: MOCK CHEESE CAKE

1 1/4 cup graham cracker crumbs, (14)
1/3 cup melted butter
1/2 teaspoon cinnamon, optional
2 tablespoon sugar
1 cup milk
1 cup sour cream
3 each strips lemon rind
1 pkg vanilla pudding, (3oz)

Prepare crust with graham cracker crumbs and melted butter , using about 14 graham crackers. If desired, add 1/2 teaspoon cinnamon to graham cracker crumbs. Press crust on bottom and sides of 9 inch pie pan. If desired, bake crust at 375 degrees, 8 minutes for additional flavor. Place sugar, milk, sour cream, lemon rind, and instant vanilla pudding, in blender. Blend for 10 seconds. Pour mixture into prepared crust. Chill 15 minutes, before serving.

Yield: 4 servings
