BLENDER: QUICKIE CHEESE CAKE

2 pkg unflavored gelatin
1/2 each lemon, juice only
1/2 teaspoon lemon extract
1/2 cup hot water
1/3 cup sugar
2 each egg yolks
1 pkg cream cheese, softened, 8oz
1 cup crushed ice, heaping
1/2 cup heavy cream

Place unflavored gelatin, lemon juice, lemon extract, and hot water in blender. Blend 40 seconds. Add sugar, egg yolks, and cream cheese. Blend 20 seconds. Add crushed ice and cream. Blend 15 seconds. Pour cheese mixture into 4 cup spring form pan. Sprinkle with crumbs of choice. Before sprinkling, add 2 tablespoons melted butter, 1 tablespoon sugar, and 1 teaspoon cinnamon, to crumbs and mix well. Chill. Dessert can be unmolded in 30 minutes, or remained chilled until ready to serve.

Yield: 8 servings
