BLENDER;: MUSHROOM SOUP

1/2 lb sliced mushrooms
1 each onion, chopped
3 tablespoon butter
4 cup chicken broth
2 tablespoon cooking sherry
1/2 teaspoon salt
1/2 teaspoon pepper

Brown sliced mushrooms in butter, and put in blender. Add 1 cup chicken broth. Blend about 10 seconds, or until mushrooms are minced. Pour mixture into a saucepan. Add chicken broth, cooking sherry, salt, and pepper. Simmer 10 minutes, or until soup is piping hot and richly cmooth.

Yield: 6 servings
