BB: ARTICHOKE SALAD WITH CAPER DRESSING

1 pkg frozen artichokes, 9oz
1/4 cup nonfat sour cream
1/4 cup nonfat mayonnaise
3 tablespoon capers, chopped
1 teaspoon lemon juice
2 teaspoon dejon mustard
2 each heads bib lettuce
1 each green pepper, diced

Cook frozen artichoke hearts according to package directions and drain. Cover and chill in the freezer for 15 minutes. Meanwhile in a mixing bowl stir together sour cream, mayonnaise, capers, lemon juice. and mustard. Line 4 salad plates with bib lettuce leaves. Arrange artichoke hearts and green pepper pieces atop lettuce. Drizzle caper dressing over begetables. Per serving: fat 0.6 G, cholesterol 0 MG, fiber 1 G, calories 76, 7 percent calories from fat, protein 3 G, carbohydrate 13 G, sodium 790 MG.
