Bran Muffins

1 1/2 cup bran cereal
1 cup buttermilk
1 cup flour
6 tablespoon brown sugar
2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 each eggs
1/4 cup cooking oil
2/3 cup chopped dates

In mixing bowl, combine bran cereal and buttermilk. (If buttermilk is not available, substitute 1 1/2 teaspoons lemon juice, or vinegar combined with enough milk to make 1 cup. Let stand 5 minutes, before using.) Let stand 3 minutes, or till liquid is absorbed. In mixing bowl, stir together flour, sugar, baking powder, baking soda, and salt. Beat egg and oil into bran mixture. Blend into dry ingredients, stirring just till moistened. Batter will be thick. Fold in dates. Fill paper cup-lined muffin tins 2/3 full. Bake at 400 degrees, 20-25 minutes, or till muffins are done. Cool on wire rack.

Yield: 12 servings
