BRONCO BUSTER SOUP: (Stew Meat Mix)

1 1/2 cup stew meat mix
2 cup stew meat broth
1 can pinto beans drained, 15oz
1 cup onion, chopped
1/2 teaspoon thyme
2 each potatoes, peeled, diced
2 each carrots, sliced
1/4 cup parmesan cheese

In a large saucepan, combine stew meat mix, stew meat broth, pinto beans, onion, and thyme. Cook covered over medium heat, till broth is thawed, 10-15 minutes. Mash beans slightly, add potatoes and carrots to soup, and cover. Reduce heat, and simmer 30 minutes or till vegetables are tender, stirring occationally. Season to taste with salt and pepper. Ladle soup into bowls. Sprinkle each serving with 1 tablespoon parmesan cheese.

Yield: 4 servings
