Carrot Cake

2 cup flour
2 cup sugar
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon cinnamon
3 cup grated carrots
1 cup oil
4 each eggs

In large mixing bowl stir together flour, sugar, baking powder, baking soda, salt and cinnamon. Add carots, oil and eggs. Beat until well blended. Pour in to greased and floured 9-13 inch baking pan or 2 9 inch round cake pans. Bake sheet cake, 50-60 minutes at 325 degrees. Bake layers, 40 minutes, at 325 degrees.

Yield: 16 servings
