BB: BASIC MACARONI AND CHEESE

breads, cheese/eggs

3 tablespoon liquid butter buds
2 tablespoon flour
1/2 teaspoon light salt
1/2 teaspoon pepper
2 cup skim milk
1 tablespoon liquid butter buds
2 cup elbow macaroni, cooked
1 tablespoon grated onion
1/2 teaspoon light salt
1/4 teaspoon pepper
2 cup grated nonfat cheddar cheese
1/2 cup crushed stuffing cubes

Prepare white sauce by combineing butter buds, flour, salt, pepper, and slowly adding skim milk. Stir with a wire whisk until smooth and thickened. Set aside. Place half of the cooked macaroni in the bottom of a 2 quart casserole dish, that has been sprayed with Pam. Sprinkle with half of onion, salt, pepper, and cheese. Repeat. Pour sauce over the casserole, and drizzle 1 tablespoon liquid butter buds over the top. Sprinkle remaining cheese over this. Sprinkle crushed, seasoned Pepperage Farm stuffing cubes on top. Cover, and bake for 30 minutes, at 350 degrees. Uncover and bake 10 minutes longer. Per serving: fat 0.3 G, cholesterol 2 MG, fiber 1 G, calories 84, 3 percent calories from fat, protein 6 G, carbohydrate 13 G, sodium 129 MG.
