Cheesy Grits

6 cup water
1 teaspoon salt
2 cup quick cooking grits
3 cup milk
1 each stick butter
2 each cloves garlic, minced
4 each eggs
2 cup grated sharp cheddar cheese

Butter 4 quart casserole, and set aside. In large heavy saucepan, bring water and salt to a boil over high heat. Add grits, stirring to prevent lumping. Stir in milk, then bring mixture to a boil. Reduce heat, and simmer 5 minutes. In small saucepan, combine butter and garlic over medium heat. Cook butter and garlic, stirring constantly, until garlic becomes aromatic. Add garlic butter mixture to grits. Place eggs in small mixing bowl, and beat slightly with a wire wisk. Stir 1 cup of hot grits into beaten eggs. Add egg mixture to grits in saucepan, and stir to blend. Remove grits from heat. Stir in 1 1/2 cups cheese until blended. Pour mixture into prepared casserole and sprinkle with remaining cheese. Bake at 400 degrees, till grits are brown around the edges. If desired, chill before baking, then cook at 350 degrees, for 1 hour, for firmer grits.
