CHICKEN MACARONI MOLD: (Cooked Chicken)

2 cup chicken broth
1 pkg lemon jello, 3oz
1/2 cup cold water
3 tablespoon vinegar
1 tablespoon onion, chopped
2/3 cup mayonnaise
1 1/2 cup cooked chicken
1/2 cup cooked macaroni
1/4 cup celery, chopped
1/4 cup pimento, chopped

In covered saucepan, heat chicken broth to boiling, over medium heat. In large bowl, dissolve Jello in chicken broth. Stir in cold water, vinegar, and onion. Blend in mayonnaise, till mixture is smooth. Chill till partially set, about 1 1/2 hours, Jello mixture should mound slightly, when spooned. When mixture is partially set, fold in cooked chicken, macaroni, celery, and pimento. Turn mixture into ring mold. Chill several hours, or over night. To unmold, let mold set at room temperature 10-15 minutes, or emerse mold in warm water for 15-20 seconds, then, place serving plate over mold and invert. Slowly lift off mold.
