Chicken Rice Casserole

1 each stick butter
1 each onion
1 can cream chicken soup
1/2 can milk
1 cup velveeta cheese, 8 oz
1 each head broccoli
1 cup rice, cooked
2 cup water,
2 cup cooked chicken, chopped

Place 2 cups water in sauce pan and bring to boil. Add rice and reduce heat. Simmer rice 20 minutes. Place broccoli in steamer and cook until done, about 10 minutes. Chop in to bite sized pieces. Saute onion in butter. Add cream of chicken soup and milk. Cook until heated through. Cube cheese and add to soup mixture. Cook until cheese melts. Add steamed broccoli and chicken. Add cooked rice. Pour into greased 9 x 13 baking dish, cover. Bake at 350 degrees, 40 minutes.

Yield: 8 servings
