Apple Fritters

2 each eggs, separated
2/3 cup milk
1 tablespoon butter, melted
1 cup flour
1/4 teaspoon salt
1 tablespoon sugar
2 cup apples, diced
Combine all ingredients except egg whites and apples. Mix well. If time permits let batter rest in covered bowl in refrigerator 2 hours before proceeding with recipe. Beat egg whites until stiff peaks form and fold into chilled batter. Peel and core apples. Dice into small pieces or grate if desired. Toss with sugar. Dip sugared fruit into batter. Heat oil to 375 degrees in large skillet. Fritters will take 3-5 minutes to cook. Dust with powdered sugar when done.
