Cranberry Apple Bread

2 cup apples, peeled, chopped
3/4 cup sugar
2 tablespoon oil
1 each egg
1 1/2 cup flour
1 1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon cinnamon
1 cup fresh cranberries
1/2 cup nuts, chopped

Preheat oven to 350 degrees. Grease a loaf pan. Combine apples, sugar, and oil, in a medium mixing bowl. Add eggs, mixing well. Combine dry ingredients in a separate mixing bowl. Add to apple mixture, mixing just until the dry ingredients are moist. Stir in cranberries and nuts. Spread batter evenly in loaf pan. Bake for 1 hour or until a wooden pick incerted in center comes out clean.

Yield: 14 servings
