Cranberry Apple Chicken Breasts

1 1/4 cup cranberries, chopped
1/3 cup apple diced, plus:
2 tablespoon apple, diced
1/4 cup nuts, chopped, plus:
2 teaspoon nuts, chopped
4 each chicken breast halves
1 cup grated jack cheese

Preheat oven to 350 degrees. Combine chopped cranberries, diced apple, and nuts in a medium glass bowl. Place chicken breasts, which have been pounded to 1/2 inch thickness, in a 9-13 inch glass baking dish. Top each breast with 1/3 cup of cranberry filling. Bake for 30 minutes, or until chicken is no longer pink inside. Top each breast with 1/4 cup Jack cheese. Bake for an additional 5 minutes, or until cheese has melted.

Yield: 4 servings
