Cranberry Waldorf Salad Mold

1 can jellied cranberry sauce 16oz
1/2 cup cold water
2 pkg unflavored gelatin
1 cup gingerale
2 teaspoon lemon juice
1/2 cup apple, peeled, diced
1/2 cup celery, diced
1/4 cup nuts, chopped

Put cranberry sauce in a medium mixing bowl, and break up sauce with a fork. Set aside. Put cold water in a small sauce pan, and sprinkle unflavored gelatin over water. Let stand 1 minute or until gelatin is moist. Cook over low heat until gelatin is completely dissolved, stirring frequently. Add gelatin to cranberry sauce, and cool slightly. Add gingerale and lemon juice. Chill until mixture is partially set. Stir in apple, celery, and nuts. Spoon into 6 individual molds, or a 4 cup mold. Chill until firm.

Yield: 6 servings
