Apple Pie

8 each cooking apples
1 tablespoon lemon juice
1 cup sugar
2 tablespoon flour
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1 tablespoon butter
2 each pie crusts, 9 inch

Peel and core apples. (Firm, tart, Granny Smith apples are best.) Slice into eighths. Place in large bowl and mix with lemon juice. Add sugar, flour, cinnamon and nutmeg. Mix gently until apple slices are coated with sugar mixture. Line 9 inch pie pan with pie crust. Fill with apple mixture. Dot with butter. Adjust top crust. Remove excess crust and crimp edges. Cut slits in top crust to vent. Sprinkle with sugar if desired. Bake at 375 degrees 45-50 minutes.

Yield: 8 servings
