Creamed Spinach

10 oz frozen chopped spinach
2 each strips bacon chopped fine
1 1/2 tablespoon onion, chopped fine
1 cup half and half
1 1/2 tablespoon butter
1 tablespoon flour
3/4 teaspoon salt
1/4 teaspoon black pepper
1 1/2 teaspoon liquid smoke

Thaw frozen chopped spinach, and cook for 4 minutes in steamer or boiling salted water. Drain, and set aside. In skillet, brown bacon and onion. Add salt and pepper to bacon and onion and set aside. In saucepan, bring Half And Half to a boil. Melt butter in saucepan and add flour. Mix thoroughly, and combine with Half And Half. Add liquid smoke to Half And Half. Cook until mixture thickens. Add spinach, bacon, and onions, to Half And Half mixture. Stir thoroughly, and heat through.

Yield: 4 servings
