CULIFLOWER HAM CHOWDER: (Creamy Sauce Mix)

2 cup chicken broth
1 pkg culiflower, 10oz
1/2 each green pepper, chopped
1 can cream of potato soup
3/4 cup creamy sauce mix
1 cup water
8 oz cooked ham, diced

In saucepan, heat chicken broth, over medium low heat, about 15 minutes, stirring occasionally till heated through. Bring to boiling. Pour over frozen culiflower in colander, reserve broth. Cut culiflower into bite sized pieces. Add culiflower and chopped green pepper to chicken broth. In small bowl combine, potato soup, and creamy sauce mix. Blend in water. Add to vegetable mixture in saucepan. Cook and stir till thickened and bubbly. Stir in ham, and heat through. Sprinkle each serving with Herb Stuffing mix, or croutons if desired.

Yield: 4 servings
