Deviled Tomatoes

4 each tomatoes
6 each t
6 tablespoon butter
2 each hard boiled egg yolks
1 each egg, beaten
1 teaspoon powdered sugar
1 teaspoon prepared mustard
2 tablespoon vinegar
1/4 teaspoon salt
1/8 teaspoon black pepper

Peel and slice tomatoes. Place 2 tablespoons butter in skillet, and fry tomatoes lightly, turning often. Melt remaining butter. Mash hard cooked egg yolks and add to melted butter. Add powdered sugar, mustard, vinegar, salt, and pepper, to butter egg mixture. Add beaten egg, stirring mixture well. Cook until mixture thickens. Stir constantly. Place fried tomatoes in serving dish and pour egg mixture over them. Serve hot.

Yield: 6 servings
