DRESSED UP ORANGE PORK STEAKS: (Herb Stuffing Mix)

4 each pork steaks, 1/2 inch thick
1 each orange
1 each egg, beaten
2 1/2 cup herb stuffing mix
1 each rib celery, chopped
1 each onion, chopped
1/4 teaspoon salt
1/4 teaspoon paprika

Trim excess fat from pork steaks. Melt pork fat in skillet, and discard any unmelted trimmings. Brown steaks in hot pork drippings. Sprinkle with salt and pepper. Remove from heat, and arrange pork steaks in 13-9 inch baking pan. Set aside. Grate 2 tablespoons orange peel, and set aside. Squeeze juice from orange, then add enough water to juice to make 1/3 cup liquid. In small bowl, combine egg, orange peel and juice, mixture. Add herb stuffing mix, celery, onion, and salt. Shape herb stuffing mix into mounds by pressing into a 1/2 cup measuring cup. Place one mound of herb dressing atop each pork steak, and cover tightly with foil. Bake at 350 degrees, 1 hour, or till meat is tender. Sprinkle herb stuffing mounds with paprika.
