EGGS BENEDICT: (Creamy Sauce Mix)

cheese/eggs, main dish

4 each slices cooked ham
2 tablespoon butter
4 each eggs
2 teaspoon water
2 each english muffins, split
1 cup mock hollandaise sauce

Prepare Mock Hollandaise sauce, and keep warm over low heat. Warm ham in 8 inch skillet over low heat, or in microwave. Meanwhile, in 10 inch skillet with tight fitting lid, melt butter. Carefully add eggs, and season with salt and pepper. When egg whites are set and edges are cooked, add water. Cover skillet and continue cooking until yolks are almost set. To serve, place 1 toasted English muffin half on serving plate. Arrange 1 slice ham, and 1 cooked egg, on English muffin. Pour 1/4 cup Mock Hollandaise sauce atop. Repeat, for remaining servings.

Yield: 4 servings
