ELECTRIC ROASTER: CHICKEN VEGETABLE STEW

1 tablespoon cooking oil
1 each chicken, cut into bites
1 each onion, chopped
1 each carrot, chopped
2 each potatoes, diced
2 each ribs celery, chopped
1 each tomato, chopped
1/2 teaspoon poultry seasoning
1/4 teaspoon thyme
1 teaspoon salt
1/2 teaspoon pepper
1 cup chicken stock
1 single corn starch
Preheat electric roaster to 325 degrees, and spray with cooking spray. Pour cooking oil into roaster, and heat, covered, until roaster is hot. Add diced chicken, cover roaster, and cook 10 minutes, stirring once during cooking. Add vegetables, seasonings, and chicken stock. Reduce heat to simmer, and cook 40 minutes. Just before serving, thicken to desired consistancy with corn starch.
Yield: 4 servings
