ELECTRIC ROASTER: LAYERED ANCHELADAS

1 lb ground beef
1 each onion, chopped
2 tablespoon green chilis, diced
2 tablespoon chili powder
1 teaspoon salt
1/2 teaspoon pepper
2 cup cooked brown rice
8 each corn tortillas
1 1/2 cup tomato juice
2 can red kidney beans, 16oz
1 can tomato sauce, 16oz
1 cup cheddar cheese, shreaded

Preheat electric roaster, to 350 degrees, and spray with cooking spray. Place ground beef, and onion in roaster. Cover and cook 10 minutes, stirring occasionally, until meat is browned. Drain. Return meat and onion to roaster. Add diced chilis, chili powder, salt, and pepper. Cover, and cook 5-10 minutes. Place meat mixture in a mixing bowl, and set aside for later use. In saucepan, combine cooked brown rice, and tomato juice, and heat through. Place 4 tortillas in roaster. Add half of the cooked brown rice, half of the meat mixture, 1 can beans, and 1 cup tomato sauce. Repeat for second layer, and top with cheddar cheese. Bake covered, 20-30 minutes.
