ELECTRIC ROASTER: MINISTRONI SOUP

4 cup beef broth
4 each potatoes, peeled, diced
2 each carrots, peeled, chopped
1 each onion, chopped
1 each rib celery, chopped
2 each tomatoes, chopped,
1 can stewed tomatoes, 16oz
1 can tomato paste, 6oz
1/4 cup uncooked macaroni
1 pkg frozen vegetables, 10oz
1 can great northern beans 16oz
2 each strips bacon, crumbled
1 teaspoon salt
1/2 teaspoon pepper

Preheat electric roaster to 375 degrees, and spray with cooking spray. Place beef broth, potatoes, carrots, onion, celery, and tomatoes in roaster. Cover, and cook 10 minutes. Add stewed tomatoes, tomato paste, and macaroni. Cover, and cook 10 minutes. Add frozen vegetables, beans, bacon, salt, and pepper. Reduce heat to 350 degrees. Cover, and continue cooking for 30-45 minutes.

Yield: 6 servings
