ELECTRIC ROASTER: TURKEY MORNAY

2 each heads broccoli
1 cup water
1 lb turkey breast, 6 slices
1/4 lb cooked ham
2 each sticks butter
1/4 cup flour
1 cup chicken broth
1/2 cup milk
1 teaspoon lemon peel, grated
1 teaspoon salt
1/2 teaspoon pepper
1/4 cup parmisan cheese
1 teaspoon parsley
Set rack in electric roaster. Add 1 cup water. Cover and preheat to 350, for 20 minutes. Place broccoli speres on rack and steam, 10-12 minutes. Remove broccoli and rack, and discard water. In saucepan, melt butter. Stir in flour to form a roux, or thick paste. Gradually stir in chicken broth and milk to desired thickness. (If mixture is to thick, increase milk to 3/4 cup. Add lemon peel, salt, and pepper. Stir to blend ingredients. Remove from heat. Spray roaster with cooking spray. Arrange broccoli in roaster. Layer turkey slices, then ham slices, atop broccoli. Pour sauce over meat. Top with parmaisan cheese and parsley. Bake in roaster, 25-30, minutes.
Yield: 6 servings
