ELECTRIC ROASTER: CLAM CHOWDER

2 tablespoon butter
1 each onion, chopped
2 tablespoon flour
3 cup milk
4 each red potatoes, cooked, diced
1 can minced clams, 7oz
1 teaspoon salt
1 teaspoon pepper
1 teaspoon paprika

Preheat electric roaster to 400 degrees, and spray with cooking spray. Place butter and onion in roaster. Cover, and cook 5 minutes. Add flour, and stir until mixture is thick and bubbly. Gradually stir in milk. Add potatoes, minced clams, salt, pepper, and paprika.Cover roaster, and cook 10 minutes. Reduce heat to 300 degrees. Cover roaster, and cook 20-30 minutes, stirring occasionally. Do not boil. Serve hot.

Yield: 4 servings
