Fish Dressing

1/4 cup salad oil
1/2 cup spinich leaves
1/2 cup parsley
1 each clove garlic, minced
2 tablespoon chives
1 1/4 cup mayonaise

Remove stems from spinich leaves. Place oil, spinich, parsley, garlic, and chives, in blender. Pulse for about 1 minute, or until vegitables are finely chopped. Stir once after 30 seconds. Place mayonaise in bowl, and fold in chopped vegitables. Serve with cold fish or shell fish.

Yield: 8 servings
